Prepare a 36-portion batch of Toffee Chex Mix to give as gifts to teachers and other holiday recipients or have on hand as a snack. Baked Toffee Chex Mix can be prepared in advance and kept for later use. Cereal, nuts, and pretzels in the mix will be coated with crunchy or chewy toffee, depending on the length of time you bake the mix.

Rice or corn Chex cereals are good bases. Other toppings include nuts and pretzels or pretzel twists. Ingredients for the toffee topping include butter, dark brown sugar, corn syrup, and salt. Other ingredients include vanilla and baking soda, which you stir into the toffee mixture before combining it with the base ingredients.

Use larger saucepans than usual: Baked foods prepared with baking soda react strongly and foam when toffee syrup is added. Melting of the toffee syrup coating in the oven signals when to stir coated baked foods for even coating. Possible problems include splashing of toffee syrup and other problems with uneven coating before baking. To coat other foods evenly, use a folding motion beginning at the bottom of the saucepan.

Use the cooled mixture to fill cookie tins or other containers for gifts or holiday treats. Follow precautions to prevent portions of the cooled mixture from sticking together when serving. Do not pack the warm mixture into containers.
Why this recipe works
- One box of cereal and other snacks will provide 36 servings. These can be given as gifts or used to fill many snack bowls.
- Cooling and removing baked cake and other desserts from pans makes it easier to divide the food into multiple servings or containers.
- Bake for 30 minutes for softer cookies or up to 55 minutes for crunchier cookies. This will help your cookies be suitable for any use.
- Serving the mixture cold helps keep the clusters coated with toffee from sticking to each other while serving and helps customers serve themselves more easily.
- The coating melts while the food is being cooked. Stirring helps coat a group of foods more evenly than attempting to completely coat individual pieces before cooking.
- Two baking sheets and layers of batter can make it easier to bake and cool large quantities of batter.
Ingredients
- •1 12.8 oz box Rice or Corn Chex cereal
- •3 cups assorted nuts (pecans, almonds, peanuts, etc.)
- •3 cups pretzel thins (or mini knots)
- •1 cup unsalted butter
- •2 cups dark brown sugar
- •¾ cup light corn syrup
- •1 tsp salt
- •2 tsp pure vanilla extract
- •1 tsp baking soda
Instructions
- 1
Place 2 racks as near to the center of the oven as possible and preheat to 250 degrees.
- 2
Line 2 baking sheets with aluminum foil and spray generously with cooking spray.
- 3
In a very large mixing bowl, add the entire box of cereal, assorted nuts, and pretzels, then set aside.
- 4
Place a large saucepan over medium heat and melt the butter.
- 5
When the butter is melted, add the brown sugar, corn syrup, and salt.
- 6
Bring the mixture to a boil, stirring frequently.
- 7
Allow the mixture to boil for 2 minutes, then remove from the heat.
- 8
Carefully stir in the vanilla extract.
- 9
Add the baking soda and mix thoroughly until completely combined; the toffee will foam and bubble furiously.
- 10
Pour the hot toffee over the cereal, nuts, and pretzels and gently fold to combine, working from the bottom of the bowl to coat the mix.
- 11
Divide the mixture between the two prepared baking sheets and spread evenly.
- 12
Bake for 30–55 minutes, stirring every 15 minutes; bake 30 minutes for chewier toffee or 55 minutes for crispier toffee.
- 13
Remove from the oven and continue stirring and separating the clumps until the mix is cool enough to stay separate.
- 14
Transfer to a bowl and enjoy.
